A true fall delight, pumpkin dinner rolls.
And the good thing is that it is very easy and quick to prepare, which is really important for every modern housewife.
- 1 tbsp dry yeast
- 1 cup lukewarm milk
- ¼ cup sugar
- 3 tablespoons butter, melted
- ½ cup mashed pumpkin
- 2 eggs
- 1 teaspoon salt
- 2 cups flour
- Cashew for the stem
In a bowl mix milk, yeast, butter, one egg, mashed pumpkin and mix nicely and then start to slowly add flour until you get a smooth dough.
Leave the dough to rest for 5 minutes, then knead for another 5 minutes.
Shape the dough into a ball and place it clean container, greased with oil, to settle for about 45 minutes – 1 hour at room temperature.
Once the dough is ready, knead it and separate it into 15 equal balls. Flatten each ball with the palm and cut the edges in eight places (as showed in the picture). Arrange the pumping like dough on a baking tray, cover with plastic wrap and leave for another 45 minutes – 1 hour at room temperature.
Before baking make a small dent in each ball at the top and brush with a mixture of egg and 1 teaspoon water. Place the pumpkin dinner rolls in a preheated oven at 175 °C/347 °F for 15-20 minutes.
When ready, remove from oven and place one cashew (the stem) in each piece.
